The pergola, or arbor, is the traditional farming system of Valpolicella and it is 2000 years old. The crown of the plant protects the grapes from the overexposure to the sun, while the height of the trunk protects against possible damages caused by frost and humidity, taking advantage of the daily temperature variation.
